• 500g of wheat flour
  • 325ml of warm water
  • 10g of salt
  • 5g of dry yeast
  • 400g of peeled tomatoes
  • 300g of fresh mozzarella
  • Fresh basil leaves
  • Extra virgin olive oil


  1. In a large bowl, mix the flour and salt.
  2. Dissolve the yeast in the warm water and add it to the flour mixture. Mix until a dough forms.
  3. Knead the dough for 10 minutes until it is smooth and elastic.
  4. Let the dough rest for 1 hour or until it doubles in size.
  5. Preheat the wood-fired oven.
  6. Divide the dough into smaller balls and roll them out into thin discs.
  7. Spread the peeled tomatoes over the dough discs.
  8. Tear the mozzarella and distribute it over the discs.
  9. Add basil leaves and drizzle with olive oil.
  10. Bake in the wood-fired oven until the edges are golden and the cheese is melted.
